Operation Baby Countdown: Freezer Meals: Part 3 {Chicken Pesto Pasta}

Today I made a super super simple dish for the freezer… I mean so easy it will knock your socks off if you are wearing any!

I will call this my Chicken-Pesto-Pasta Bake, ok? OK!

what you will need if you care to know…

Quantities are dependent on how much you want to make!

  • 1 rotisserie chicken
  • large jar of pesto
  • pack whole wheat noodles – your choice on shape/type
  • mozzarella cheese

I de-boned my chicken the evening before – my favorite time to do this is when they are still warm from the store. It is so much easier to get the most meat off of them and also get a little snack at the same time! 🙂 Then I cooked a big box of whole wheat penne pasta, drained the water off and stirred in my big jar of pesto! Then I added my chicken pieces and stirred in some shredded mozzarella cheese! So so easy! I put this into two gallon size ziplock bags, layed them flat in the freezer and wa-la! Ready to be thawed for another day! Love it! Once I am ready to prepare it, I will thaw it and spread it into a baking dish, sprinkle the top with some more cheese and bake it. I have not frozen this dish before so made it more simple than I may otherwise, not knowing how all the ingredients would do… I have also added shredded zucchini to this and have also made it with roasted tomatoes on top for a pop of color and nutrients!
