Operation Baby Countdown: Freezer Meals: Part 2 {Spaghetti Bake}

It is operation: baby coming soon still and I am getting down to the “one month to go” mark which is pretty crazy!

I already talked about my list of foods that I wanted to try to make for the freezer in my last post and guess what!? I have actually done some cooking ahead! 🙂 Unfortunately (or not because I had such a mess going on) I did not get pictures of the process which always make a blog more worth reading, but I will try to work on getting some pictures! It is hard for me to take pictures when I have created such a mess and have a little one on my hip – somehow it just slips my mind to stop and capture every moment! 🙂

What I made today and froze:

Spaghetti Bake with Veggies (version of the day)

  • ground beef (really good if you have some Italian sausage to mix in too, but I was out)
  • marinara sauce
  • shredded zucchini – sautéed
  • shredded carrot – sautéed
  •  onion – sautéed
  • noodles of choice – I used one pack of the new “veggie” noodles and one pack of whole wheat noodles
  • cheese of choice (I used shredded mozzarella) to stir in and also give a nice blanket on the top! Cheese is magical.

I don’t follow recipes too much, a lot of times I just kind of work off of something in my head so I can tell you what I did if that helps…

I went to Costco and bought a big pack of beef, cooked it all in a big pot, added some marinara and wa-la, ended up with a pile of meat sauce ready to go! Then I boiled a bunch of spaghetti noodles… too!  I also had some zucchini and carrots to use up in the fridge and an onion too, so I processed them in my food processor, sautéed them and stirred it into my meat sauce before combining it all with some noodles and cheese.  I got super excited and we had company for dinner so did not freeze a ton of extra but that is ok, I don’t want to have too much of one thing in the freezer. Variety sounds pretty good.  I put a good amount of my mixture into a 9×13 pan, sprinkled a lot of cheese on top, covered it with foil and put it in the fridge to bake for company later.  Then I put the rest into two gallon size Ziploc bags.  In addition, I had enough extra meat to freeze a gallon size bag of just the meat sauce so I can use it in spaghetti or maybe a lasagna later.
